Raspberry & Honey-Glazed Ham

Honey-Glazed Ham with a Raspberry Glaze: A classic holiday dish, honey-glazed ham can be given a festive twist with a raspberry glaze. The sweetness and slight tanginess of the raspberry complement the fruity notes of our Rosé, while the succulence of the ham pairs nicely with the wine's dryness. Final Baking with Raspberry Glaze: An additional 30 minutes after applying the raspberry glaze.

INGREDIENTS

For the Ham:

  • 1 bone-in fully cooked ham (about 8-10 pounds)

  • Whole cloves (optional, for studding the ham)

For the Honey Glaze:

  • 1/2 cup honey

  • 1/4 cup brown sugar

  • 2 tablespoons Dijon mustard

  • 1 teaspoon ground cinnamon

  • 1/2 teaspoon ground cloves

For the Raspberry Glaze:

  • 1 cup raspberry preserves or jam

  • 1/4 cup apple cider vinegar

  • 1 tablespoon brown sugar

  • 1 teaspoon ground ginger

  • A pinch of salt

DIRECTIONS

1.     Preheat the Oven: Preheat your oven to 325°F (163°C).

2.     Prepare the Ham: If your ham has a thick layer of skin, trim it down leaving about a 1/4-inch layer of fat. Score the surface of the ham in a diamond pattern and stud with cloves if desired.

3.     Make the Honey Glaze: In a small bowl, combine honey, brown sugar, Dijon mustard, cinnamon, and ground cloves. Mix well.

4.     Bake the Ham: Place the ham in a roasting pan and brush it with about a third of the honey glaze. Tent the ham with foil and bake for about 1.5 hours, basting with the remaining honey glaze every 30 minutes.

5.     Make the Raspberry Glaze: While the ham is baking, combine raspberry preserves, apple cider vinegar, brown sugar, ginger, and a pinch of salt in a saucepan. Bring to a simmer over medium heat, stirring occasionally, until the glaze is smooth and slightly thickened.

6.     Glaze the Ham: About 30 minutes before the ham is done, remove the foil and brush the raspberry glaze over the ham. Continue baking, uncovered, for the remaining time, or until the internal temperature reaches 140°F (60°C).

7.     Rest and Serve: Let the ham rest for 10-15 minutes before slicing. Serve with any remaining raspberry glaze on the side.
