COOKING TIME: 2-3 hours
Preparation Time: About 15-20 minutes to prepare the rub and apply it to the beef. If you allow the beef to marinate with the rub for enhanced flavor, add an additional hour or more, depending on your preference.
Cooking Time: The cooking time in the oven varies based on the size of the roast and your preferred level of doneness. For a 3-4 pound roast, you can estimate about 20-25 minutes per pound for medium-rare doneness. This means the roast will typically take about 1 hour to 1 hour and 40 minutes to cook.
Resting Time: After roasting, it's important to rest the meat for about 15-20 minutes before slicing.
PAIRED WINES: “New World” Cabernet Sauvignon and “Zin Master” Zinfandel
SERVINGS: 6-8 people
INGREDIENTS
For the Coffee & Chocolate Rub:
2 tablespoons finely ground coffee
2 tablespoons unsweetened cocoa powder
1 tablespoon brown sugar
1 tablespoon paprika
1 teaspoon ground black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon cayenne pepper (optional, for heat)
Salt to taste
For the Roast Beef:
1 boneless beef roast (about 3-4 pounds), such as ribeye, sirloin, or tenderloin
2 tablespoons olive oil
Fresh herbs for garnish (like rosemary or thyme)
DIRECTIONS
1. Prepare the Rub: In a small bowl, mix together the ground coffee, cocoa powder, brown sugar, paprika, black pepper, garlic powder, onion powder, cayenne pepper (if using), and salt.
2. Rub the Beef: Pat the beef roast dry with paper towels. Rub the entire surface of the beef with olive oil, then generously apply the coffee and chocolate rub, pressing it onto the meat to adhere.
3. Let the Beef Marinate: If time allows, let the beef sit with the rub on it for at least 1 hour, or up to overnight in the refrigerator, covered. This allows the flavors to penetrate the meat.
4. Preheat the Oven: Preheat your oven to 375°F (190°C).
5. Roast the Beef: Place the beef on a rack in a roasting pan. Roast in the preheated oven until it reaches your desired level of doneness. For medium-rare, roast until the internal temperature reaches 130°F to 135°F (about 20-25 minutes per pound). For medium, aim for 135°F to 145°F.
6. Rest the Beef: Remove the roast from the oven and let it rest for 15-20 minutes before slicing. Resting allows the juices to redistribute throughout the meat.
7. Serve: Slice the beef and serve it garnished with fresh herbs.
