Directions
1. Season beef with salt and pepper.
2. Cook bacon in a Dutch oven until crisp; remove.
3. Brown beef in bacon fat; remove.
4. Sauté onion and carrots, add garlic and tomato paste.
5. Return beef and bacon, add wine, broth, bay leaf, and thyme.
6. Simmer on low for 2–3 hours until tender.
7. Add mushrooms and pearl onions; cook 20 minutes more.
