Directions

2. Melt butter and olive oil over low heat. Add onion and brown sugar. Cook slowly, stirring occasionally, 30–45 minutes until deeply golden and sweet.
3. Brush flatbread with olive oil, sprinkle with salt, and warm in a 375°F oven a few minutes. Smear with caramelized onion, top with brisket and Gruyère. Return to oven 4–5 minutes until cheese melts.
4. Top with arugula, a pinch of salt, and cracked black pepper.
5. Slice and serve.
